There is more to Vietnamese soup than phở though phở is still my favorite hangover cure, and apparently most of New Orleans agrees. In Vietnam, noodle soups are breakfast food: filling enough to start the day, light enough that you’re not stagnant by noon. Bún Bò Huế, Bún Mọc, Bún Riêu – these are the dishes that would blow phở out of the water if more people knew them. These recipes go beyond the noodle bowl, but the same principle applies: a good soup should make you feel ready, not weighed down.
