I’ve been cooking a lot of chicken over fire lately. The Gà Lá Lốt with chicken thighs, betel leaves, and sansho pepper has been one of the dishes people keep talking about after supper club, and it reminded me of an older recipe I hadn’t made in a minute.
These grilled chicken kabobs with chimichurri are one of my favorite things to make when I’m feeding a group. Most of the work can happen ahead of time, which means once people show up, all I really need to do is get the skewers on the grill.
Usually a few disappear before I actually get them to the table. I take that as a good sign.
