Deviled Eggs (But Make It Đặc Biệt)

In đặc biệt fashion, these deviled eggs are extremely fancy. In this recipe, you'll learn how to make a classic deviled egg, but we are spicing things up with a bunch of different toppings.

Ingredients
  

DEVILED EGGS
  • 6 large eggs (hard boiled)
  • ¼ tsp salt
  • ½ tsp sugar
  • ¼ tsp paprika
  • Few cracks black pepper
  • 1 tsp mustard
  • 1 tsp hot sauce (vinegar based or sriracha)
  • 3 tbsp mayo (kewpie or your favorite)
FOR THE SPECIAL TOPPINGS
  • 4 strips bacon (baked or fried until crispy)
  • 4-6 pieces chicken thigh skin (bake until crispy)
  • 12 pieces salmon skin chips
  • 2 oz salmon roe or any caviar
  • 3 tbsp your favorite chili crisp
  • 3 tbsp chopped chives
  • hot sauce (optional)

Method
 

FOR THE DEVILED EGGS
  1. Steam the eggs for 12-13 minutes, drain the water, crack the eggs by shaking them in the pot and fill with cold water. Let them sit for 10-15 minutes and then peel. Cut in half and reserve the yolks in a bowl.
  2. Mix the salt, sugar, paprika and black pepper into the yolks and mash.
  3. Add in the mustard, hot sauce and mayo and mix until incorporated.
  4. Pipe into the egg whites and top with toppings or a dash of paprika.
FOR THE SPECIAL TOPPINGS
  1. Bake or fry the bacon until crispy. I normally bake at 375ºF for 8 minutes on a sheet tray.
  2. For the chicken skins , lay them on a sheet tray and bake at 350ºF until golden brown and crispy - usually takes about 6-8 minutes in a convection oven.
  3. Everything else is store bought.
