FOR THE DEVILED EGGS
- Steam the eggs for 12-13 minutes, drain the water, crack the eggs by shaking them in the pot and fill with cold water. Let them sit for 10-15 minutes and then peel. Cut in half and reserve the yolks in a bowl.
- Mix the salt, sugar, paprika and black pepper into the yolks and mash.
- Add in the mustard, hot sauce and mayo and mix until incorporated.
- Pipe into the egg whites and top with toppings or a dash of paprika.
FOR THE SPECIAL TOPPINGS
- Bake or fry the bacon until crispy. I normally bake at 375ºF for 8 minutes on a sheet tray.
- For the chicken skins , lay them on a sheet tray and bake at 350ºF until golden brown and crispy - usually takes about 6-8 minutes in a convection oven.
- Everything else is store bought.
